shouldnt you life the meat up, then put a little marinade on the bottom then lay the meat in and put the rest ontop because it didnt look like it would get coated underneith

For soaking the fries? just spoon sugar in to the water about 2 table spoons per cup.

The fries are crispier if you half boil the fries before you mix it with the oil and everything. It makes crispy fries because the fries are drier after you boil it.

Thanks. the fries really are great. the important thing is to work in small batches and keep all the fries in the pan in contact with the bottom. Try and get all the fries browned on at least 3 sides. Trust me, they are pretty great.RB

Are the fries crispy that way? I've found that soft fries are inevitable unless you deep fry. If the whole pan technique works then I'm sold.Btw- kudos on the desert.
